Refrigerator Rolls
Ingredient List :
1 package (1/4 oz.) active dry yeast
2 1/2 cups water, divided
1/2 cup margarine
2 eggs
1 1/2 tsp. salt
1/2 cup sugar
7 1/2 to 8 cups all-purpose flour

Directions :
Dissolve yeast in 1/2 cup warm water (110-115 degrees F). In a large mixing bowl, combine 1 cup boiling water and shortening. Add eggs, salt, sugar, yeast mixture and remaining water. Stir in 1 cup of flour at a time, mixing well after each addition. Add enough flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to grease top. Cover and refrigerate overnight. When ready to bake, form dough into cloverleaf rolls and place in muffin cups coated with nonstick cooking spray. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 375 degrees F for 15-20 minutes. Makes 3 dozen rolls.
