Greek-Style Tilapia
Ingredient List :
1 tsp. olive oil
1 minced clove garlic
4 cups fresh baby spinach
vegetable spray
2 tilapia fillets, skinless
1/4 tsp. black pepper
2 oz. low fat feta cheese, cut into 2 pieces

Directions :
Preheat oven to 350 degrees F. Heat skillet over medium-low heat. Add olive oil and heat. Saute garlic in oil, stirring occasionally, about 2 minutes. Do not burn. Add spinach to skillet and saute, stirring occasionally, until wilted. Lay fillets on baking sheet sprayed with vegetable spray. Season with black pepper. Top each fillet with a piece of cheese. Top cheese with spinach mixture. Wrap 1 end of fillet up and over cheese and spinach filling. Pin down with toothpick. Repeat with remaining fillet. Bake until fish is firm to the touch and flakes easily with a fork, about 20 minutes.
