Chicken Marsala - A Low Carb Delight!Ingredient List : Vegetable cooking spray 4 boneless skinless chicken breast fillets 3 cups sliced fresh mushrooms 2 T. sliced green onion 2 T. water 1/4 tsp. salt 1/4 c. dry Marsala wine 1 tsp. cornstarch
-------------------------------------------------------------------------------- Directions : Flatten chicken fillets between two pieces of plastic wrap. Spray nonstick skillet with vegetable cooking spray; heat over medium heat until hot. Add chicken, cook 2-3 min. on each side (until no longer pink in center). Transfer to platter; keep warm. Add mushrooms, onion, water and salt to skillet. Cook approx. 3 min., until most of liquid has evaporated. Whisk together wine and cornstarch in small bowl; add to skillet. Heat, stirring constantly, until thickened. Spoon over warm chicken.
