Marinated Chicken Pesto Ingredient List : 4 Boneless Skinless Chicken Breasts _ cup olive oil Dash of salt and pepper Fresh Basil - snipped into small pieces 2 carrots - sliced thin 10 - 15 Fresh asparagus spears - blanched and cut into small pieces 1 cup cherry tomatoes - cut in half 2 cloves fresh garlic - minced _ cup fresh grated Romano cheese
-------------------------------------------------------------------------------- Directions : 1. Cut up chicken into small pieces. 2. Saute´ in olive oil until cooked. 3. Drain chicken and cool completely. 4. Mix together in a large bowl the chicken and the remaining ingredients. 5. Add about 1 or 2 T olive oil and toss well. 6. Place in refrigerator and let marinate for at least 3 to 4 hours, best if overnight.
