Touch-of Peanut-Butter Cookies
Ingredient List :
butter flavored cooking spray
1/4 cup fat free margarine
1/4 cup pure maple syrup
2 tbsp. reduced-fat peanut butter
1 1/2 cup light brown sugar
2 tsp. vanilla extract
1/4 cup fat-free egg substitute or 2 egg whites
2 cups flour
1 tsp. baking soda
1/2 tsp. salt

Directions :
Preheat oven to 325 degrees F. Spray cookie sheet with cooking spray and wipe with a paper towel to absorb the excess. Combine margarine, maple syrup, peanut butter, brown sugar, vanilla, and egg substitute in a large bowl and mix well. In a medium bowl, mix together flour, baking soda, and salt. Add the flour mixture to the peanut butter mixture and mix well. Drop spoonfuls of dough (1/2 to 1 tbsp.) onto cookie sheet. Bake about 12 minutes. Cool for 3 minutes before removing cookie from sheet. Makes 60 cookies; 2 cookies per serving.
